Introduction to Nutrition Hi, I'm Harvey, the Nutrition Class Mascot.
Every semester I go on a trip never to be seen again.

Harvey, the Nutrition Follow me on an exciting journey. See me transform from -- a bun, meat patty, cheese, mayo,
Class Mascot tomato, lettuce and ketchup - to my simplest parts: the nutrients -- amino acids, mono-, disaccharides,
mono-, di- and triglycerides, glycerol, free fatty acids, vitamins and minerals.
Stay with me as I journey through my pathways (metabolism) and see how my parts function in the body.
I jump with excitement at the prospect of this breathtaking, thrilling, and never to return journey!!
In "Introduction to Nutrition" you will learn the fundamentals of how nutrients work in unison to nourish the body for energy and good health.

Grace G. Martin is a registered dietitian (MS, RD). She worked as Public Health Consultant at the NJ State Department of Health and Senior Services, WIC Services for 15 years. In this capacity, she provided consultative and technical assistance to managers at the WIC local agencies; and, conducted training sessions on nutrition to the State and local agency professional staff.
Ms. Martin has taught nutrition for most of her professional life. Her experiences include teaching basic nutrition, diet therapy and fundamental foods at Rutgers, Emory University, Raritan Valley Community College, Crawford Long Memorial Hospital of Emory University - School of Nursing, and Elizabeth General Medical Center - School of Nursing, now known as Trinitas Hospital, Elizabeth, NJ.
In July 2002, Ms. Martin retired from State government and started her own consulting/speaking business -- G. G. Martin Enterprises.
She retired to pursue her purpose in life: to make a difference in the lives of individuals who want to improve their health and well-being by making healthy food choices and lifestyle changes.
Ms. Martin produced an inspirational CD entitled, "You're a Diamond in Disguise."
